(an ermine coat)
Stoats were hunted for their beautiful warm winter coat (fur).
The fur (also called ‘pelts’ = fur with skin) was in very much demand in olden days.
The ermine pelts were used in the robes (= long ceremonial gowns) of the Lord Chief Justice of England, and the robes of the royal families of Europe!
